Almond Cake

Anyone in need of a super fast and easy cake? 

I used this recipe from Green Kitchen Stories.  I cut the recipe in half and it still made a decent size cake! I substituted coconut oil instead of the rapeseed oil because I didn't have any, and used fresh raspberries instead. 

For the glaze I used Krema Greek style thick and rich honey yogurt.

Seriously though, you've got to try it. I've eaten half of it already.........

This boy keeps melting my heart!

Salad Bowl

This is one of my new favourite salads! We've now had it 2 nights in a row, except last night I made it with chicken breast which was just as good.  Since I always just wing it when cooking I'll try to make it as accurate as possible....

Ingredients:

1/2 bunch organic spinach chopped

1 sweet red pepper

2 big tomatoes 

handful of fresh basil chopped

handful rosted pistachios 

1/4 cup semi sprouted mixed sprouts 

1/4 cup crumbled feta 

1/2 cup cooked and cooled quinoa 

half a can of chickpeas:

 washed, drizzled in olive oil, paprika and salt. Broil till golden brown 

1 steak:

fried in butter seasoned with salt, chilli powder and smoked paprika. Cut into thin slices

Dressing;

1/4 cup avocado oil 

1 fresh squeezed lemon juice 

1 tsp. organic dijon mustard 

1.5 tsp. finely grated ginger 

1 finely grated garlic clove

pinch of pink himalayan salt 

pinch of freshly grated pepper 

In my photos the quinoa is beneath the salad, but it can be tossed with everything!

Gardens in the Sun

One of the most satisfying things is picking fresh right from a garden. 

Both my mother and mother in law have amazing gardens, and I can't wait to create one of my own some day soon!

Nursery

Today I finished putting together this little guys nursery. 

I'm pretty happy with the way it's turned out so far especially since a lot of things have been made by me and you can be your worst critic! 

I'm still not 100% finished on the one side of the room where the turquoise Ikea cart is, but I'm sure I'll figure something out eventually, no need to rush everything....

Also the little crib does not sit in front of the big one, I just placed it there to take a photo of it. It belongs in our bedroom. I can't wait to show you the before and after cuz it's quite the difference!

My husband is coming home tonight from 3 weeks away at work, so we are hoping the little guys makes his appearance soon!

life lately

How wonderful a nice beach day can be! The sis in-law and us went to the nicest little beach yesterday and just had an afternoon full of snacks, and she even took Mak out for paddle board. 

I am so ready to meet this little man, over 38 weeks pregnant now, so keeping myself busy and making the days go by is great! Keep it up sun :)

Mak and I

Woohoo 37 weeks along today!

Lately I've realized that it will no longer be just me and Mak, so I've been soaking up some Mak and I time. I know he's super excited to meet his little brother but I can see how it will be difficult when all the attention is not on him anymore. 

My husband will be away till July so it will just be Mak, myself, and a newborn... whoa i'm pretty scared! 

As much as I want to meet this little guy soon, the longer he waits the less time I will have to be alone with a 4 year old and newborn, that being said I know I'll manage :)

Maternity

My hubby left at 6 this morning to head off to work for a few days, which gave me time to edit a few more photos before my little munchkin woke up!

Berry Scones

This was my first attempt at scones and oh boy did they ever taste good!!!

I'm always worried when baking because i've never considered myself good at it, but this recipe was super easy and on the healthier side, a must try! 

We basically ate them all in just a few hours, the recipe I used is:

31 weeks along

My mother and I decided to try out a Maternity photo shoot when the sun was out the other day. 

 I am so happy with the photos and have been having fun editing them since!

There are tons so I'm sure you'll be getting bombarded with photos for a while :)

I can't believe Spring is just around the corner! I love filling the house with flowers, it makes me so happy :)

This bump pic is from around 26 weeks I would say and I am now about 28.5

The bump is supposto grow about an inch a week, which seems like so much!!

I also scored one of these mason jar cuppow's yesterday, which are sweet cuz now I can have my smoothies on the go and don't need to worry about spilling them!
