Pumpkin Fun!





 With Halloween over, I thought I'd share some Pictures of my Halloween Decor, and my little horse of course! I LOVE pumpkins and gourds and all there colors, they make  such beautiful decorations.
We took our son out to a local Pumpkin patch which was so fun! I feel so lucky to have them all around us in the fall. In the Czech. Republic (where I was born) they're not so common, and you can pay up to $20 for 1 pumpkin!!! 




I made a really tasty curry the other night and wanted to share the recipe with you. It's to be made with Lamb but I did Chicken instead. Either way it's delicious!





Red Curry
1 lb. of chicken or lamb
2 tbsp. veg oil 
1 large onion sliced 
2 cloves garlic, diced 
2 tbsp. red curry paste
2/3 cup coconut milk
1 tbsp. brown sugar 
1 large red pepper, seeded and thickly sliced 
1/2 cup of veg. stock
1 tbsp. fish sauce
2 tbsp lime juice
1 cup canned water chestnuts, drained 
2 tbsp. cilantro
2 tbsp. fresh basil
lemon grass, white part only chopped very fine
 half small green chili pepper seeded and diced (optional)
salt, pepper
jasmin rice

Cut meat into small cubes. Heat the oil in a pan, add the onion, and garlic and stir fry for 2-3 minuets to soften. Add meat and stir fry until lightly browned. Stir in curry paste, and let it cook for a few seconds, then add the coconut milk, sugar, and lemon grass and let it come to a boil. Reduce heat, and 
simmer for 10 mins, stirring occasionally.
Stir in the red pepper, stock, fish sauce, and lime juice along with the green chili pepper, and let cook for another 10 mins, or till the chicken is cooked and the pepper is soft.  Stir in the water chestnuts, cilantro, and basil. Add salt and pepper to your liking. Put the cooked jasmine rice into a bowl and top with the curry. Make sure you get lots of sauce on there! garnish with more fresh cilantro and basil.
