Salmon & Salad Recipe



Since we have a freezer full of wild sockeye salmon (husband is a fishermen) it's always a last minuet go to because it thaws so quickly. 

I barley ever cook with recipes and usually just make stuff up, so here's the best way to explain what to do!


Beet Salad
Dice about 6 small beats into small chunks
dice 1 yam into small chunks
Place beats into an oven dish, drizzle with olive oil and a pinch of salt.
Bake beets for 20 mins at 400
Remove from oven and add yams, place back into the oven for 30 min.
Once baked I transfer them into a bowl and let cool for at least an hour.
Chop up about a cup of spinach or kale and add to salad once the beets and yams are cold.
Add 1/2 cup of goat cheese crumbles, salt, pepper, and drizzle with balsamic reduction.
Toss salad!

Moroccan Couscous Salad
1.4 cups of Israeli couscous (follow cooking instructions on packaging)
this is the big pearl couscous, I found it at costco. 
Once it's cooked let it cool in fridge for about half an hour or more, stirring occasionally.
Add half a cup raisins
half a cup roasted almond slivers
half a cup diced apricots
1 cup chopped fresh cilantro.
1 tbls of curry power (or more depending on the more flavour you'd like)
drizzle with a good amount of olive oil, and squeeze half a lemon.
Salt, pepper, and 1/2 teaspoon of ground cinnamon.
Toss and it's ready!

Salmon
side of wild sockeye salmon
drizzle with olive oil, maple syrup.
rub about 2 tbls of brown sugar all over the top of filet. 
Bake at 400 for 15 mins.

It's so good, I would highly recommend both salads!
Like I said though I usually just make things up as I go so you can play with the amount of each ingredient or even add things like cherry tomatoes to the couscous salad!!!

Fruit Green Smoothie



Mmm lately I've been making smoothies like crazy again, must be the feeling of Spring!

Here's how I made this one:
1 apple cored
1 kiwi
1 orange peeled (also put in a 1/4 of the orange peel, theres tons of vitamin C in it)
1 grapefruit juiced 
Handful of raspberries
Handful of each Kale and Spinach
1 inch chunk of peeled fresh Turmeric
2 -3 cups water

My Vitamix blends anything so i'm not sure if a regular blender will blend the orange peel and turmeric... but give it a try

Face Mask



So nice to have something refreshing on my face this time of year in the heat.
I had a little bit of left over cucumber yesterday so I decided to make a face mask, well more like a runny mask I guess!

Here's what I used:
1/2 cup chopped up cucumber
big spoon full of organic plain yogurt
spoon of coconut oil
pinch of cinnamon 
(optional is honey, it will hold it together better) I just didn't have any 
I used an Oster hand held blender, I find stand up blenders don't blend well if there's not a lot in them.
Rub all over face and wait 10-15 mins, wash with luke warm water :)
I would say it could last in the fridge for 2-4 days

Garden Quinoa Salad




If you know me you know I just wing recipes, so I'll do my best to make it accurate :)

Garden Quinoa Salad:

1 cup cooked and cooled red or white quinoa
1/2 cup cherry tomatoes halved 
3 small organic carrots chopped
1/4 of a yellow pepper chopped 
1 or 2 celery sticks chopped
1/4 cup homemade chopped picked beets 
4 large curly kale leaves finely chopped 
4 fresh basil leaves diced
2 tablespoons hemp hearts 
handfull of chopped nuts, I used almond and cashew 
1/4 cup or more crumbled goats cheese 

 A bit of pink himalayan salt, drizzle with olive oil, and white wine vinegar. 
Once served drizzle with Balsamic reduction 

This salad is so delicious, easy to make, and can be substituted with so many yummy things!

Fresh Smoothie

Carrot Citrus Juice








I made some fresh carrot juice yesterday, mmm
Here's what I would suggest for a couple big glass's:
10 carrots
2 apples
1 orange
1 grapefruit (optional, I found the grapefruit made it pretty sour and bitter)

I used my juicer instead of my Vitamix, but you can use the Vitamix and strain the juice through cheese cloth or a strainer bag.

Green Smoothie...





Ever since we got our Vita Mixer I've been a smoothie junkie. 
You can put anything in it, whole beets, apples. carrots, the list goes on, and it purees everything amazingly!
This Smoothie has:
1 apple
1 kiwi
1 carrot
3-7 mint leaves
1 cup of melon
1/2 cup plain yogert
1/4 cup of almonds
1/8 cup hemp hearts 
big handful or two of spinach 
1 cup water (depending on how you like consistency)
1 cup orange juice

A Sunday afternoon...

Green Smoothie





  A girlfriend shared this green smoothie with me a few weeks ago, and I am now fully obsessed, I make one every morning! They very with what ever I have in the house but here's how I made this one.

1 organic apple, cored and cut into chunks
6 strawberries 
spoonful of hemp hearts
teaspoon of flax seeds 
handfull of soaked skinless almonds
4-6 mint leaves 
1/4 of a cucumber, cut up 
 a large handful of organic spinach 
and 1-2 cups water 
mmmm blend in a blender and drink up!
