Leg of Lamb

I made a leg of Lamb for the first time on Valentine's Day. We really enjoyed our meal, and it was so easy to make that I thought I would share it with you.  
Cut small slits into the lamb and put little slices of garlic into them.  In a separate bowl,  combine Paprika, Salt, Pepper, Rosemary, and Thyme. Rub olive oil all over the leg, and then rub the herb mix all over too! Bake in the oven at 350 for about 1.5 hours depending on how done you like it.  After 30 mins add the beets, and hour into it the carrots, yam, and potatoes. When everything is nearly ready I used a cast iron pan with a little bit of water to steam the asparagus for about 6 minuets then I drained the water and friend it for about 4.  When done drizzle the asparagus with olive oil and a little big of balsamic vinegar.  We also had Mint sauce which added so much flavour!!


 


My Fiancee wasn't home last night so I took this time to catch up on some Scrap booking, and when I say catch up I mean catch up!  I'm happy to have finally gotten Halloween done, and luckily since we were away I only have 1 picture for Christmas.  Hope to catch up soon enough so I can start on some Spring time pages!
